Course Overview

Our chef lecturers will develop your practical skills in food preparation and cooking. Lessons take place in our industry standard kitchens, and in Landings 72 our restaurant that is open to the public. Our level 2 students run the afternoon service of the restaurant, working in the production kitchen and front of house.
As well as developing your practical skills, it is important that you learn about food safety and hygiene alongside health and safety in the industry. The course also helps you develop your understanding of catering operations alongside learning about costings and menu planning. All students will look at healthier food and developing both menus and dishes for special diets.
In the kitchens our Chef lecturers will develop your skills, including the preparation and cooking of meat, fish, poultry, vegetables, soups, stocks and sauces. Once you have mastered the basics, we expand your skills to look at more complex dishes for example cooking shell fish and offal. In our bakery you will develop your baking skills looking at hot and cold desserts as well as producing biscuits, cakes and sponge products.
Utilising industry links, students will get to experience visiting guest Chefs taking their lessons. All students are encouraged to enter externally organised competitions as well as taking part in our in-house Hell’s Kitchen competition. Students also work on live briefs designing specific products or menus.

Completion of a written piece or work indicating you are working at an appropriate level to successfully complete the course. An interest, or previous experience in catering. Age 19+

If you have an EHCP then please be aware that the college needs to have agreed, via the consultation period with your local authority, that we can meet the needs outlined in your EHCP before you can start on a course with us.
L3 Advanced Diploma in Professional Cookery Kitchen and Larder or Pastry and Confectionary
Employment within the catering industry in a variety of settings.
You will be assessed with written work, presentations, practical assessment of your skills and assignments demonstrating your subject knowledge and skills.
